I do not like flat hikes, I love uphill, and I hate downhill (painful for my knees). My solution: do the Lantau Peak from sea level (almost sea level, anyway), then descend to Ngong Ping.
Bottom line: 900 metres (difference in altitude) up, 500 metres (difference in altitude) down.

Tips:
From Tung Chung simply take a Blue Taxi to the Shek Mun Kap Lo Hon Monastery and start walking uphill until you almost reach Ngong Ping. Then follow the signs to the Lantau Peak.
Do your knees a favour and only descend to Ngong Ping. From there take the cable car or bus 23 back to Tung Chung.
